Main Ingredients

 

The main active ingredients naturally occurring in Pitaya Powder are betalains, polyphenols, flavonoids, dietary fibre, natural fruit sugars, organic acids, vitamins, and trace minerals; specifically betalains, which are the most typical and economically valuable, can be extracted from Red Pitaya. The presence of water-soluble natural pigments (betalains) in the fruit is the origin of its deep red to purple colouration, and betalains are highly valued as naturally sourced colouring compounds in clean-label product development in the food and beverage industry. Besides its colour value, it also naturally contains phenolic compounds and flavonoids that are typically related to the formulation of plant-based ingredients and nutrition systems from fruits. In addition, the powder also contains pectin (a soluble fibre) that may be used to help stabilize the texture and formulation of products like beverage mixes, smoothie blends, bakery systems, confectionery products, and nutritional powders. Process

 

1. Raw Material Selection

The first step in the process is for the industrial manufacturers to choose the fruits of red pitaya in the mature stage with stable color, proper ripeness, and uniformity. In a large-scale supply chain, there is a need for sourcing that is reliable and would ensure uniformity of each lot and standard production.

2. Cleaning and Sorting

The fresh fruits are washed with a food-grade washing machine to remove impurities and surface residues from the fruits. Damaged and/or substandard fruits are manually or automatically removed after washing.

3. Peeling and Pulp Preparation

The outer skin is peeled off, and the red flesh is sliced off and processed. Then the pulp is ready for industrial production on a continuous basis.

4. Crushing and Homogenization

The fruit flesh is processed into a smooth puree and homogenized to create a consistent fruit texture, liquid stability, and to facilitate downstream processing.

5. Concentration and Filtration
